Betty Carroll-Valastro

Betty Carroll Valastro passed away on August 21, 2014 in Pocatello, ID with family members at her side. She was 86. She was born in Kinsley, KS on December 29, 1927 to George A. & Pauline G. (Nolde) Wittig, the eldest of 7 Children.

She attended elementary schools in Ford & Hodgeman counties, some of them were country schools. She graduated at Burdette High School with the class of 1946.

She married Gordon Carroll at St. Peter & Paul parish on September 6, 1947. They lived in the Kinsley Lewis & Fellsburg area, having farmed on the Carroll homestead farm for several years. She was a farm wife, having lived on farms half of her life. She gave birth to 9 children, 6 of whom still survive. She & Gordon later divorced. In June, 1992, she married Mario Valastro in Austin, TX. He preceded her in death.

She worked in the Dietary Department at the Edwards County Hospital for almost 20 years before taking her career in another direction by becoming a professional nanny. She was fortunate to be with a loving family for several years. She remained in contact with this family until her death. She also loved to cook & bake and was at home in almost any kitchen. She won awards at the Edwards County Fair with her baking entries. She was an accomplished seamstress, making clothing for herself & her young daughters. She also enjoyed traveling, having gone on several cruises and a trip to Europe.

She was a member of the St. Nicholas Parish & Ladies Alter society and Daughters of Isabella in Kinsley, and St. Anthony Parish in Pocatello. She was also actively involved in her church in Illinois, Austin, Texas and St. Maximillian in California.

She is survived by daughters Colette Hefner (Richard) Westminster, CO; Marla Hicks (Jim) Pocatello, ID; Beth Cadenas (Rafael) Arnold, MD: sons Kelly (Linda) Montezuma, KS, Mike (Kim) Newbury Park, CA; Patrick (Bernadette) Thousand Oaks, CA; Stepdaughters Elsie Craven (Mel), & Rose (Royce) Myers of Austin, TX Stepson James (Monica) Valastro Aurora, IL; 18 grandchildren; 15 great grandchildren; 6 step grandchildren and 6 step great grandchildren; sisters Eileen Dovel, June Pottorff & Shirley Kyle, Brothers Gerald & Clyde Wittig. She was preceded by first husband Gordon; sons Christopher, Joseph & Mark, Stepson Angelo Valastro grandson Shane Konrade, her parents & Sister Billie Snyder.

A Funeral Mass at St Anthony Catholic Church and Memorial Vigil at Wilks funeral Home are planned with dates and time to be announced. Donations may be made in her name to the Parkinson Disease Foundation. A very special thanks is given to Access Home Health and Hospice, Portneuf Medical Center, Quinn Meadows, and Elegant Assisted Living.
